Heath Edrick Knox, 48, passed away on Thursday, February 22, 2024. A celebration of life will be held on Saturday, March 23, 2024 from 11:00 am - 3:00 pm at County Line Raceway in Elm City.

 

Heath will be fondly remembered for his culinary prowess, particularly his expertise in BBQ and brisket, exemplified through his business, Sköl BBQ. His generous spirit shined through his frequent hosting of events, catering to various communities, including The Town of Lucama, the Wilson County Sheriff's Department, and numerous other gatherings. Additionally, Heath found fulfillment as a welding instructor at Wilson Community College while cherishing his affinity for strong coffee, his distinctive orange truck, and his cherished family and friends. His sarcastic/quick wit and penchant for humor never failed to uplift those around him.

 

Heath is survived by his devoted and loving wife, Mary Moore Knox; daughters, Hayden Bridgers and her dog, Gizmo, and Malece Overman, accompanied by her husband, Jeremy; grandchildren, Jacob Overman and Danielle Overman; sister, Angie Hunter, alongside her husband, Rick; as well as his extended family in West Virginia. He leaves behind a multitude of dear friends, including Rusty and Dodie Allen, Joshua Stevens, Earl, and Gale Moore; Eddie Ray and Judy Abrams; Bridgette, Bella, and Kevin Baker; Brandi, Austin, Chloe, Kameron, and Brook Holcombe; in addition to his cherished canine companion and partner in crime, Hoss; and his colleagues, students, and friends at Wilson Community College. Many held him in high esteem, and though unable to enumerate them all, it is evident that he was deeply loved.

 

Heath was preceded in death by his parents, Tom and Vada Knox, his brothers, Wesley Knox and Scott Knox, and his beloved dog, Niko.
